- 2 cups Zucchini grated
- 1 cup Breadcrumbs
- 1 cup Cheese shredded
- 2 Eggs beaten
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 tablespoon Olive Oil
Grate the zucchini and squeeze out excess moisture.
In a mixing bowl, combine zucchini, breadcrumbs, cheese, eggs, salt, and pepper.
Heat olive oil in a frying pan over medium heat.
Form mixture into patties and cook in the pan until golden brown on both sides, about 4-5 minutes per side.
Serve warm.
