Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, diced
  • 2 cans Great Northern Beans, drained and rinsed
  • 2 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Chili Powder
  • 1 cup Sour Cream
  • ½ cup Heavy Cream
  • 1 cup Shredded Monterey Jack Cheese

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Add diced chicken breast and cook until no longer pink.
  4. Add the beans, chicken broth, cumin, oregano, and chili powder. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in sour cream, heavy cream, and shredded Monterey Jack cheese. Cook until cheese is melted and the chili is heated through.
  6. Serve hot, garnished with additional cheese or chopped cilantro if desired.
