Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 sweet potato, peeled and cubed
  • 1 can diced tomatoes
  • ½ cup peanut butter
  • 1 bunch collard greens, chopped
  • to taste salt and pepper

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger, and cook for another 2 minutes.
  3. Stir in the cumin, coriander, and cayenne pepper, and cook for 1 minute.
  4. Add the vegetable broth, sweet potato, and tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potato is tender.
  5. Stir in the peanut butter until well combined. Add the collard greens and cook for another 5 minutes, until the greens are wilted.
  6. Season with salt and pepper to taste. Serve hot.
