Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 cup Green beans, chopped
  • 1 cup Corn kernels
  • 1 can Diced tomatoes
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Dried thyme

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add carrots, celery, and green beans. Cook for 5 minutes.
  5. Add corn, diced tomatoes, vegetable broth, salt, pepper, and thyme. Bring to a boil.
  6. Reduce heat and let it simmer for 20 minutes.
  7. Serve hot.
