Ingredients 

Main Ingredients

  • 4 cups Potatoes, diced
  • 2 cups Carrots, sliced
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 cloves Garlic, minced

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  3. 3. Add garlic and cook for another minute.
  4. 4. Add potatoes, vegetable broth, salt, and pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 30-35 minutes, until potatoes are tender.
  6. 6. Adjust seasoning if needed and serve hot.
