Ingredients 

Main Ingredients

  • 2 cups Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Yellow Curry Paste
  • 1 cup Cauliflower Florets
  • 1 cup Zucchini, chopped
  • 1 cup Bell Pepper, chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add yellow curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in coconut milk and vegetable broth, and bring to a simmer.
  4. Add cauliflower, zucchini, and bell pepper. Simmer for 15-20 minutes until vegetables are tender.
  5. Season with salt and black pepper to taste. Serve hot.
