Vegan African Peanut Stew

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 teaspoon ginger, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ¼ teaspoon cayenne pepper
- 1 sweet potato, peeled and cubed
- 1 can diced tomatoes
- 1 cup vegetable broth
- ½ cup peanut butter
- 1 cup kale, chopped
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic, red bell pepper, and ginger. Cook for another 2-3 minutes.
Stir in the cumin, coriander, and cayenne pepper. Cook for 1 minute.
Add the sweet potato, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potato is tender.
Stir in the peanut butter until well combined. Add the kale and cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
