Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 sweet potato, peeled and cubed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • ½ cup peanut butter
  • 1 cup kale, chopped
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, red bell pepper, and ginger. Cook for another 2-3 minutes.
  3. Stir in the cumin, coriander, and cayenne pepper. Cook for 1 minute.
  4. Add the sweet potato, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potato is tender.
  5. Stir in the peanut butter until well combined. Add the kale and cook for another 5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
