Ingredients 

Main Ingredients

  • 2 cups beets, peeled and grated
  • 1 cup carrots, peeled and grated
  • 1 cup onion, finely chopped
  • 4 cups cabbage, shredded
  • 3 cups potatoes, peeled and cubed
  • 6 cups beef or vegetable broth
  • 2 tablespoon tomato paste
  • 2 cloves garlic, minced
  • 2 tablespoon lemon juice
  • to taste salt and pepper
  • 1 tablespoon sugar
  • 1 cup sour cream, for serving
  • 2 tablespoon fresh dill, chopped

Instructions 

  1. 1. In a large pot, bring the broth to a boil. Add the potatoes and cook until tender, about 15 minutes.
  2. 2. In a separate pan, sauté the onions, carrots, and beets until soft, about 10 minutes. Add the tomato paste and cook for another 5 minutes.
  3. 3. Add the sautéed vegetables to the pot with the potatoes. Stir in the cabbage, garlic, lemon juice, sugar, salt, and pepper. Simmer for 20-30 minutes.
  4. 4. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
