Ingredients 

Main Ingredients

  • 2 cups Coconut milk
  • 1 cup Chicken broth
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 2 cloves Garlic, minced
  • 1 inch Ginger, sliced
  • 1 stalk Lemongrass, chopped
  • 2 cups Mushrooms, sliced
  • 1 cup Chicken breast, cooked and shredded
  • 1 tablespoon Cilantro, chopped

Instructions 

  1. 1. In a saucepan, combine coconut milk, chicken broth, fish sauce, lime juice, garlic, ginger, and lemongrass. Bring to a boil.
  2. 2. Reduce heat and simmer for 10 minutes.
  3. 3. Add mushrooms and chicken. Cook for another 5 minutes.
  4. 4. Remove from heat and discard ginger and lemongrass pieces.
  5. 5. Garnish with cilantro before serving.
