Ingredients 

Main Ingredients

  • 2 cups dried hibiscus flowers
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato, chopped
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 8 pieces corn tortillas

Toppings

  • to taste cilantro, chopped
  • to taste lime wedges
  • to taste salsa

Instructions 

  1. 1. Rinse the dried hibiscus flowers under cold water.
  2. 2. In a saucepan, bring 4 cups of water to a boil. Add the hibiscus flowers and simmer for 10 minutes.
  3. 3. Strain the flowers and set aside.
  4. 4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  5. 5. Add the chopped tomato, cumin, and salt. Cook for another 5 minutes.
  6. 6. Add the hibiscus flowers to the skillet and cook for another 5 minutes, stirring occasionally.
  7. 7. Warm the corn tortillas in a separate skillet or microwave.
  8. 8. Serve the hibiscus mixture on the tortillas and top with cilantro, lime wedges, and salsa.
