Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 medium potatoes peeled and cubed
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup chopped green onions
  • ¼ cup chopped celery

Instructions 

  1. 1. Boil the sweet potatoes and potatoes in a pot of salted water until tender, about 10-15 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and black pepper.
  3. 3. Add the cooled potatoes, green onions, and celery to the bowl. Mix well to coat.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
