Ingredients

  • 1 cup split peas
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 cup water
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the split peas under cold water.
  2. 2. In a large pot, sauté the onion and garlic until translucent.
  3. 3. Add the carrots and celery, and cook for another 5 minutes.
  4. 4. Add the split peas, vegetable broth, and water. Bring to a boil.
  5. 5. Reduce heat, cover, and simmer for about 1 hour, or until peas are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
