Main Ingredients
- 1 cup split peas
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 cups vegetable broth
- 1 cup water
- 2 medium carrots chopped
- 2 stalks celery chopped
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Rinse the split peas under cold water.
2. In a large pot, sauté the onion and garlic until translucent.
3. Add the carrots and celery, and cook for another 5 minutes.
4. Add the split peas, vegetable broth, and water. Bring to a boil.
5. Reduce heat, cover, and simmer for about 1 hour, or until peas are tender.
6. Season with salt and pepper to taste. Serve hot.
