Main Ingredients
- 1 cup red lentils rinsed
- 1 large onion chopped
- 2 cloves garlic minced
- 1 tablespoon ginger grated
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup spinach fresh
- to taste salt
- to taste black pepper
1. Heat a large pot over medium heat. Add a bit of oil and sauté the onions until translucent.
2. Add the garlic and ginger, and cook for another minute.
3. Stir in the curry powder, cumin, turmeric, and chili powder. Cook for another minute.
4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
5. Add the spinach and cook for another 5 minutes. Season with salt and pepper to taste.
6. Serve hot and enjoy!
