Ingredients 

Main Ingredients

  • 1 cup crab meat fresh or canned
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons sherry optional

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the flour and whisk continuously for about 2 minutes to make a roux.
  3. 3. Gradually add the milk and chicken broth, whisking constantly to avoid lumps.
  4. 4. Bring the mixture to a simmer and cook until it thickens, about 5 minutes.
  5. 5. Stir in the crab meat, heavy cream, salt, and black pepper. Cook for another 10 minutes.
  6. 6. If using, add the sherry and cook for an additional 2 minutes.
  7. 7. Serve hot, garnished with a sprinkle of fresh parsley if desired.
