Main Ingredients
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- ½ cup breadcrumbs
- ¼ cup finely chopped onion
- ¼ cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 egg
- 2 tablespoon olive oil (for cooking)
In a large bowl, mash black beans with a fork.
Add cooked quinoa, breadcrumbs, onion, bell pepper, garlic, cumin, smoked paprika, salt, and black pepper. Mix well.
Add the egg and mix until well combined.
Form the mixture into 4 patties.
Heat olive oil in a skillet over medium heat.
Cook patties for 4-5 minutes on each side, until golden brown and heated through.
