Ingredients 

Main Ingredients

  • 1 cup quinoa, cooked
  • 1 can black beans, drained and rinsed
  • ½ cup breadcrumbs
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg
  • 2 tablespoon olive oil (for cooking)

Instructions 

  1. In a large bowl, mash black beans with a fork.
  2. Add cooked quinoa, breadcrumbs, onion, bell pepper, garlic, cumin, smoked paprika, salt, and black pepper. Mix well.
  3. Add the egg and mix until well combined.
  4. Form the mixture into 4 patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook patties for 4-5 minutes on each side, until golden brown and heated through.
