Ingredients 

Main Ingredients

  • 2 lbs beef stew meat cut into chunks
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 2 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. 1. Set your pressure cooker to sauté mode and heat a bit of oil. Brown the beef stew meat in batches, then set aside.
  2. 2. In the same pot, add the chopped onion and garlic. Sauté until softened.
  3. 3. Add the tomato paste, thyme, and rosemary. Stir well.
  4. 4. Return the browned beef to the pot, then add the beef broth, carrots, and potatoes. Stir to combine.
  5. 5. Close the lid and set the pressure cooker to high pressure for 35 minutes.
  6. 6. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  7. 7. Season with salt and pepper to taste before serving.
