  • 4 medium potatoes peeled and grated
  • 1 medium onion grated
  • 2 large eggs beaten
  • ¼ cup flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup vegetable oil for frying

Instructions 

  1. 1. Grate the potatoes and onion. Place in a clean kitchen towel and squeeze out excess moisture.
  2. 2. In a mixing bowl, combine the grated potatoes, grated onion, beaten eggs, flour, salt, and pepper.
  3. 3. Heat the vegetable oil in a frying pan over medium-high heat.
  4. 4. Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with a spatula. Fry until golden brown on both sides.
  5. 5. Remove the latkes and drain on paper towels. Serve hot.
