Custard
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup sugar
- 3 egg yolks
- 2 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 package puff pastry thawed
Preheat your oven to 400°F (200°C).
In a saucepan, combine heavy cream, milk, and sugar. Heat until sugar is dissolved.
In a bowl, whisk egg yolks and cornstarch until smooth. Slowly add to the milk mixture, whisking constantly.
Cook over medium heat until thickened. Remove from heat and stir in vanilla extract.
Roll out puff pastry and cut into circles to fit your muffin tin. Press into the tin.
Fill each pastry with the custard mixture.
Bake for 20-25 minutes or until the tops are browned and the pastry is crispy.
Let cool before serving.
