Instructions
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from wok and set aside.
In the same wok, add the remaining vegetable oil. Add the garlic and onion, and sauté until fragrant.
Add the diced pork and cook until browned and cooked through.
Add the frozen peas and carrots, and cook for another 2-3 minutes.
Add the cooked rice, soy sauce, and oyster sauce. Stir-fry for 3-4 minutes, making sure everything is well combined.
Return the scrambled eggs to the wok and mix well. Drizzle with sesame oil and garnish with chopped green onions before serving.
