  • 1 cup Pistachios shelled and chopped
  • 2 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Honey
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper freshly ground

Instructions 

  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, and crumbled feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle the chopped pistachios on top before serving.
