Ingredients

  • 1 cup pearl couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Cook the pearl couscous according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
