Main Ingredients
- 8 oz noodles any type
- ½ cup peanut butter
- ¼ cup soy sauce
- 2 tablespoon sesame oil
- 1 tablespoon honey
- 2 cloves garlic minced
- 1 tablespoon ginger grated
- ¼ cup water
- 2 tablespoon lime juice
- 1 cup carrots shredded
- 1 cup cucumber sliced
- ¼ cup green onions chopped
- ¼ cup cilantro chopped
- 1 tablespoon sesame seeds for garnish
Cook the noodles according to the package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, sesame oil, honey, garlic, ginger, water, and lime juice until smooth.
Toss the cooked noodles with the peanut butter sauce until well coated.
Add the shredded carrots, sliced cucumber, green onions, and cilantro. Toss to combine.
Garnish with sesame seeds and serve immediately.
