Pie Crust
- 2 cups All-purpose flour
- 1 cup Unsalted butter cold, cut into cubes
- ¼ cup Ice water
Filling
- 6 cups Peaches peeled and sliced
- 1 cup Granulated sugar
- ¼ cup Brown sugar packed
- ¼ cup All-purpose flour
- 1 teaspoon Ground cinnamon
- ¼ teaspoon Ground nutmeg
- 1 tablespoon Lemon juice freshly squeezed
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine flour and butter for the crust. Add ice water and mix until dough forms. Divide into two disks, wrap in plastic, and refrigerate for at least 30 minutes.
Roll out one disk of dough and fit it into a pie dish. In another bowl, mix peaches, sugars, flour, cinnamon, nutmeg, and lemon juice. Pour into the crust.
Roll out the second disk of dough and place it over the filling. Trim and crimp the edges. Cut slits in the top crust to allow steam to escape.
Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
