Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 can diced tomatoes (14.5 oz)
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Stir in cumin, coriander, turmeric, cinnamon, and ginger. Cook for 1-2 minutes until fragrant.
  4. Add diced tomatoes, chickpeas, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Garnish with chopped cilantro before serving.
