Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 can diced tomatoes (14.5 oz)
- 1 can chickpeas, drained and rinsed (15 oz)
- 2 cups vegetable broth
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup fresh cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in cumin, coriander, turmeric, cinnamon, and ginger. Cook for 1-2 minutes until fragrant.
Add diced tomatoes, chickpeas, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Garnish with chopped cilantro before serving.
