Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in the minced garlic, cumin, and paprika. Cook for another minute.
  4. 4. Add the rinsed lentils and vegetable broth. Bring to a boil.
  5. 5. Reduce heat to a simmer and cook for 25-30 minutes, or until lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
