Main Ingredients
- 1 cup Lentils rinsed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 cup Carrots diced
- 1 cup Celery diced
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt or to taste
- ½ teaspoon Black Pepper or to taste
- 2 tablespoon Olive Oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onions, carrots, and celery. Cook until softened, about 5-7 minutes.
3. Stir in the minced garlic, cumin, and paprika. Cook for another minute.
4. Add the rinsed lentils and vegetable broth. Bring to a boil.
5. Reduce heat to a simmer and cook for 25-30 minutes, or until lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
