- 3 large Eggs
- ½ cup Granulated sugar
- 1 teaspoon Vanilla extract
- 1 cup All-purpose flour sifted
- ¼ teaspoon Salt
- 2 tablespoon Powdered sugar for dusting
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Separate the eggs. In a mixing bowl, beat the egg whites until soft peaks form. Gradually add half of the sugar and continue to beat until stiff peaks form.
In another bowl, beat the egg yolks with the remaining sugar and vanilla extract until thick and pale. Gently fold the egg yolk mixture into the egg whites.
Sift the flour and salt over the egg mixture and gently fold until combined.
Transfer the batter to a piping bag fitted with a plain round tip. Pipe 3-inch long strips onto the prepared baking sheet, spacing them about 1 inch apart.
Dust the piped batter with powdered sugar. Bake for 12-15 minutes or until the ladyfingers are lightly golden and firm to the touch.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
