Main Ingredients
- 1 lb Ground Beef
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 1 can Diced Tomatoes
- 2 cups Beef Broth
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Heavy Cream
- 1 cup Cheddar Cheese, shredded
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent. 
- Add the ground beef to the pot and cook until browned. Drain any excess fat. 
- Stir in the diced tomatoes, beef broth, chili powder, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes. 
- Stir in the heavy cream and shredded cheddar cheese. Cook until the cheese is melted and the soup is heated through. 
- Serve hot, garnished with additional cheese or your favorite toppings.
