- 1 lb Ground Beef
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 1 can Diced Tomatoes
- 2 cups Beef Broth
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Heavy Cream
- 1 cup Cheddar Cheese, shredded
Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
Add the ground beef to the pot and cook until browned. Drain any excess fat.
Stir in the diced tomatoes, beef broth, chili powder, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in the heavy cream and shredded cheddar cheese. Cook until the cheese is melted and the soup is heated through.
Serve hot, garnished with additional cheese or your favorite toppings.
