Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cauliflower rice cooked
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, cooked cauliflower rice, shredded cheese, garlic powder, onion powder, salt, and black pepper.
  3. Stuff each bell pepper with the mixture and place them in a baking dish.
  4. Bake in the preheated oven for 30 minutes, until the peppers are tender and the filling is cooked through.
  5. Remove from oven and let cool slightly before serving.
