Irish Lamb Stew Recipe
A hearty and traditional Irish lamb stew perfect for cold days.

Main Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 4 cups beef broth
- 1 cup water
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
- 2 tablespoon olive oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the lamb chunks and brown on all sides.
3. Remove the lamb and set aside.
4. In the same pot, add the onions and garlic, and cook until softened.
5. Return the lamb to the pot and add the beef broth, water, thyme, and rosemary.
6. Bring to a boil, then reduce heat and simmer for 1 hour.
7. Add the carrots and potatoes, and continue to simmer for another hour, or until the vegetables are tender.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy!
