Ingredients

  • 3 lbs corned beef brisket with spice packet
  • 4 cups water
  • 1 large onion quartered
  • 3 cloves garlic smashed
  • 1 head cabbage cut into wedges
  • 6 medium carrots peeled and cut into large pieces
  • 1 lb baby potatoes

Instructions 

  1. 1. Place the corned beef brisket, spice packet, water, onion, and garlic in the Instant Pot.
  2. 2. Close the lid and set the valve to sealing. Cook on high pressure for 90 minutes.
  3. 3. Once the cooking time is complete, allow the pressure to release naturally for 15 minutes, then quick release any remaining pressure.
  4. 4. Remove the corned beef and set aside. Add the cabbage, carrots, and potatoes to the Instant Pot.
  5. 5. Close the lid and set the valve to sealing. Cook on high pressure for 3 minutes.
  6. 6. Quick release the pressure and remove the vegetables. Slice the corned beef and serve with the vegetables.
