Ingredients 

Main Ingredients

  • 400 g Chuka soba (Chinese-style wheat noodles)
  • 2 pieces Eggs beaten
  • 100 g Ham sliced into strips
  • 1 piece Cucumber julienned
  • 1 piece Tomato sliced
  • 1 piece Carrot julienned

Dressing

  • 4 tablespoon Soy sauce
  • 4 tablespoon Rice vinegar
  • 2 tablespoon Sugar
  • 2 tablespoon Sesame oil
  • 1 tablespoon Mustard optional

Instructions 

  1. 1. Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
  2. 2. In a mixing bowl, combine soy sauce, rice vinegar, sugar, sesame oil, and mustard (if using) to make the dressing.
  3. 3. Heat a non-stick pan over medium heat and pour in the beaten eggs to make a thin omelet. Once cooked, slice into thin strips.
  4. 4. Arrange the noodles on a plate and top with ham, cucumber, tomato, carrot, and egg strips.
  5. 5. Pour the dressing over the noodles and toppings. Serve immediately.
