Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 zucchini chopped
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 cup pasta small shapes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 2 cups spinach fresh

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add carrots, celery, and zucchini. Cook for about 5 minutes.
  4. Stir in diced tomatoes and vegetable broth. Bring to a boil.
  5. Add kidney beans, pasta, oregano, and basil. Simmer for 10-15 minutes.
  6. Season with salt and pepper. Stir in spinach just before serving.
