Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 zucchini chopped
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 can kidney beans, drained and rinsed
- 1 cup pasta small shapes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste salt and pepper
- 2 cups spinach fresh
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until fragrant.
Add carrots, celery, and zucchini. Cook for about 5 minutes.
Stir in diced tomatoes and vegetable broth. Bring to a boil.
Add kidney beans, pasta, oregano, and basil. Simmer for 10-15 minutes.
Season with salt and pepper. Stir in spinach just before serving.
