Ingredients 

Fish Tacos

  • 1 lb white fish fillets such as cod or tilapia
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 8 small corn tortillas

Mango Salsa

  • 1 cup diced mango
  • ¼ cup diced red onion
  • 1 jalapeño, seeded and diced
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions 

  1. 1. In a mixing bowl, combine chili powder, cumin, and garlic powder. Rub the fish fillets with olive oil and the spice mixture.
  2. 2. Heat a skillet over medium-high heat. Cook the fish for about 3-4 minutes on each side, until it flakes easily with a fork.
  3. 3. In another bowl, combine the mango, red onion, jalapeño, cilantro, lime juice, and salt to make the salsa.
  4. 4. Warm the corn tortillas in a dry skillet or microwave.
  5. 5. Assemble the tacos by placing pieces of fish on each tortilla and topping with mango salsa. Serve immediately.
