Greek Style Beef Stew

- 2 lbs Beef Stew Meat cut into chunks
- 2 tablespoon Olive Oil
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 cups Beef Broth
- 1 cup Red Wine
- 1 can Diced Tomatoes 14.5 oz can
- 2 tablespoon Tomato Paste
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 2 pcs Bay Leaves
- to taste Salt and Pepper
- 1 cup Kalamata Olives pitted
- 2 tablespoon Fresh Parsley chopped, for garnish
Heat olive oil in a large pot over medium heat. Add the beef and brown on all sides. Remove and set aside.
In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for another minute.
Return the beef to the pot. Add the beef broth, red wine, diced tomatoes, tomato paste, oregano, thyme, and bay leaves. Stir to combine.
Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
Season with salt and pepper to taste. Stir in the Kalamata olives and cook for an additional 10 minutes.
Garnish with fresh parsley before serving. Enjoy!
