Escarole and Beans Recipe

Main Ingredients
- 2 tablespoon Olive oil
- 3 cloves Garlic, minced
- 1 head Escarole, chopped
- 2 cans Cannellini beans, drained and rinsed
- 4 cups Chicken or vegetable broth
- to taste Salt and pepper
- Heat olive oil in a large pot over medium heat. 
- Add minced garlic and sauté until fragrant, about 1 minute. 
- Add chopped escarole and cook until wilted, about 5 minutes. 
- Add cannellini beans and broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes. 
- Season with salt and pepper to taste. Serve hot.
