Egusi Soup Recipe
A rich and hearty Nigerian soup made with ground melon seeds, leafy greens, and assorted meats.

Main Ingredients
- 2 cups Egusi (ground melon seeds)
- 1 cup Palm oil
- 1 large Onion (chopped)
- 2 cups Spinach (chopped)
- 1 pound Assorted meats (beef, tripe, etc.)
- 2 cups Stock or water
- 2 tablespoons Crayfish (ground)
- to taste Salt
- to taste Pepper
1. Heat palm oil in a large pot over medium heat.
2. Add chopped onions and sauté until translucent.
3. Stir in ground egusi and cook for a few minutes, stirring constantly.
4. Add the assorted meats and cook until browned.
5. Pour in the stock or water, ground crayfish, and season with salt and pepper. Bring to a boil.
6. Reduce heat and simmer for about 30 minutes.
7. Add chopped spinach and cook for another 5 minutes.
8. Adjust seasoning if necessary and serve hot.
