- 2 cups Cooked rice preferably day-old
- 2 Eggs beaten
- 1 cup Mixed vegetables frozen or fresh
- 2 tablespoon Soy sauce
- 2 tablespoon Vegetable oil
- 2 cloves Garlic minced
- 1 teaspoon Sesame oil optional
- to taste Salt
- to taste Black pepper
- 2 stalks Green onions chopped
1. Heat the vegetable oil in a wok over medium-high heat.
2. Add the minced garlic and sauté until fragrant.
3. Push the garlic to the side and pour in the beaten eggs. Scramble until fully cooked.
4. Add the mixed vegetables and stir-fry for a few minutes.
5. Add the cooked rice and soy sauce. Stir well to combine.
6. Season with salt, black pepper, and sesame oil (if using).
7. Garnish with chopped green onions and serve hot.
