Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, cooked and shredded
  • 4 cups Chicken Broth
  • 1 can Diced Tomatoes
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn Kernels
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 Lime, cut into wedges for serving
  • 1 Avocado, sliced for serving
  • 1 Cilantro, chopped for serving
  • 1 Tortilla Chips for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Add shredded chicken, chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Serve hot with lime wedges, avocado slices, chopped cilantro, and tortilla chips.
