Ingredients 

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 cups Carrots sliced
  • 1 cup Celery sliced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 8 cups Chicken Broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 teaspoon Dried Thyme
  • 2 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. 2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. 3. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer.
  4. 4. Add the sliced carrots, celery, dried thyme, and dried parsley. Season with salt and pepper to taste.
  5. 5. Let the soup simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. 6. Remove the chicken pieces, shred the meat, and return it to the pot. Discard the bones.
  7. 7. Serve hot and enjoy!
