Ingredients 

Marinade

  • 500 g chicken breast, cut into strips
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cup coconut milk

Peanut Sauce

  • ½ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 cup coconut milk
  • 1 teaspoon chili sauce optional

Instructions 

  1. 1. In a bowl, mix all the marinade ingredients. Add chicken strips and marinate for at least 30 minutes.
  2. 2. Thread the marinated chicken onto skewers.
  3. 3. Preheat the grill to medium-high heat. Grill the chicken skewers for 5-7 minutes on each side, until fully cooked.
  4. 4. In a saucepan, combine all the peanut sauce ingredients. Cook over medium heat until smooth and heated through.
  5. 5. Serve the chicken satay with the peanut sauce on the side.
