Ingredients 

Main Ingredients

  • 1 lb chicken breast boneless, skinless
  • 8 cups chicken broth
  • 2 cups carrots sliced
  • 1 cup celery sliced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 cups egg noodles
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 2 tablespoon olive oil
  • 2 tablespoon fresh parsley chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add garlic and cook for another minute.
  3. 3. Pour in chicken broth and bring to a boil.
  4. 4. Add chicken breasts, reduce heat, and simmer until chicken is cooked through, about 20 minutes.
  5. 5. Remove chicken, shred it, and return it to the pot.
  6. 6. Stir in egg noodles and cook until tender, about 7 minutes.
  7. 7. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
