Main Ingredients
- 2 lbs Beef shank cut into chunks
- 1 Onion quartered
- 2 cloves Garlic minced
- 3 Carrots cut into chunks
- 2 Zucchini cut into chunks
- 3 Corn on the cob cut into pieces
- 4 cups Beef broth
- 2 cups Water
- to taste Salt
- to taste Pepper
- 1 bunch Cilantro chopped, for garnish
1. In a large pot, add the beef shank, onion, garlic, beef broth, and water. Bring to a boil.
2. Reduce heat to low and simmer for about 1.5 hours, or until the meat is tender.
3. Add the carrots, zucchini, and corn. Continue to simmer for another 30 minutes, or until the vegetables are tender.
4. Season with salt and pepper to taste.
5. Serve hot, garnished with chopped cilantro.
