Ingredients

  • 1 lb Chicken Thighs cut into bite-sized pieces
  • 1 lb Andouille Sausage sliced
  • ½ cup Vegetable Oil
  • ½ cup All-Purpose Flour
  • 1 Onion chopped
  • 1 Bell Pepper chopped
  • 2 stalks Celery chopped
  • 4 cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 teaspoon Cajun Seasoning
  • 2 Bay Leaves
  • 1 teaspoon Dried Thyme
  • 1 cup Okra sliced
  • 4 cups Cooked White Rice
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Gradually whisk in the flour to make a roux. Stir constantly until the roux is a dark brown color, about 20-30 minutes.
  2. 2. Add the chopped onion, bell pepper, and celery to the roux. Cook until the vegetables are tender, about 5 minutes. Stir in the garlic and cook for another minute.
  3. 3. Slowly whisk in the chicken broth until smooth. Add the chicken, sausage, Cajun seasoning, bay leaves, and thyme. Bring to a boil, then reduce the heat and simmer for 45 minutes.
  4. 4. Add the okra and simmer for another 15 minutes. Season with salt and pepper to taste.
  5. 5. Serve the gumbo over cooked white rice.
