Ingredients

  • 4 cups Broccoli florets
  • 2 cups Cheddar cheese, shredded
  • 1 cup Carrots, diced
  • 1 cup Onion, diced
  • 4 cups Chicken broth
  • 2 cups Milk
  • ¼ cup Flour
  • ¼ cup Butter
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the diced onions and carrots, and cook until tender.
  3. 3. Stir in the flour and cook for another minute.
  4. 4. Gradually whisk in the chicken broth and milk, and bring to a simmer.
  5. 5. Add the broccoli florets and cook until tender, about 10-15 minutes.
  6. 6. Use a blender to puree the soup to your desired consistency.
  7. 7. Stir in the shredded cheddar cheese until melted and smooth.
  8. 8. Season with salt and black pepper to taste.
  9. 9. Serve hot and enjoy!
