- 1 lb Boudin Sausage
- 1 cup Breadcrumbs
- 2 Eggs beaten
- 1 cup Flour
- to taste Salt and Pepper
1. Preheat the deep fryer to 350°F (175°C).
2. In a mixing bowl, combine the boudin sausage, breadcrumbs, and beaten eggs.
3. Form the mixture into small balls, about the size of a golf ball.
4. Roll each ball in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
5. Fry the balls in the preheated deep fryer until golden brown, about 3-4 minutes.
6. Remove from fryer and drain on paper towels. Season with salt and pepper to taste.
