Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Black beans, drained and rinsed 15 oz can
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 cup Corn kernels fresh or frozen
  • 4 large Flour tortillas
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 cup Salsa
  • ½ cup Sour cream
  • ¼ cup Cilantro, chopped optional

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in black beans, cumin, and chili powder. Cook until heated through, about 3-4 minutes.
  5. Add corn kernels and cook for another 2 minutes.
  6. Warm tortillas in a dry skillet or microwave.
  7. Assemble burritos by placing bean mixture, shredded cheese, salsa, sour cream, and cilantro (if using) in the center of each tortilla. Roll up and serve.
