Black Bean Burritos

Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 can Black beans, drained and rinsed 15 oz can
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 cup Corn kernels fresh or frozen
- 4 large Flour tortillas
- 1 cup Shredded cheese cheddar or Mexican blend
- 1 cup Salsa
- ½ cup Sour cream
- ¼ cup Cilantro, chopped optional
Heat olive oil in a skillet over medium heat.
Add diced onion and cook until softened, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in black beans, cumin, and chili powder. Cook until heated through, about 3-4 minutes.
Add corn kernels and cook for another 2 minutes.
Warm tortillas in a dry skillet or microwave.
Assemble burritos by placing bean mixture, shredded cheese, salsa, sour cream, and cilantro (if using) in the center of each tortilla. Roll up and serve.
