- 2 lbs Beef Chuck cut into cubes
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 3 cloves Garlic minced
- 4 cups Beef Broth
- 2 cups Carrots sliced
- 2 cups Potatoes diced
- 1 teaspoon Thyme dried
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Dumplings
- 2 cups Flour
- 1 tablespoon Baking Powder
- 1 teaspoon Salt
- 1 cup Milk
- 2 tablespoon Butter melted
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add onion and garlic, cook until softened.
Pour in beef broth, add carrots, potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
For dumplings, mix flour, baking powder, and salt in a bowl. Stir in milk and melted butter until just combined.
Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15 minutes, until dumplings are cooked through.
