Basque Codfish Stew Recipe
A hearty and flavorful Basque-style codfish stew.

Main Ingredients
- 1 lb Codfish cut into chunks
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 1 Red Bell Pepper chopped
- 1 cup Tomato Sauce
- 2 cups Fish Stock
- 1 teaspoon Paprika
- 1 Bay Leaf
- to taste Salt and Pepper
- 1 tablespoon Parsley chopped, for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Cook until softened.
Add chopped red bell pepper and cook for another 5 minutes.
Stir in tomato sauce, fish stock, paprika, and bay leaf. Bring to a simmer.
Add the codfish chunks. Season with salt and pepper to taste.
Simmer for about 20-25 minutes, until the fish is cooked through.
Remove bay leaf. Garnish with chopped parsley before serving.
