Ingredients 

Main Ingredients

  • 1 lb Codfish cut into chunks
  • 2 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Red Bell Pepper chopped
  • 1 cup Tomato Sauce
  • 2 cups Fish Stock
  • 1 teaspoon Paprika
  • 1 Bay Leaf
  • to taste Salt and Pepper
  • 1 tablespoon Parsley chopped, for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Cook until softened.
  3. Add chopped red bell pepper and cook for another 5 minutes.
  4. Stir in tomato sauce, fish stock, paprika, and bay leaf. Bring to a simmer.
  5. Add the codfish chunks. Season with salt and pepper to taste.
  6. Simmer for about 20-25 minutes, until the fish is cooked through.
  7. Remove bay leaf. Garnish with chopped parsley before serving.
