Ingredients 

Meatballs

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt

Soup

  • 8 cups chicken broth
  • 1 can diced tomatoes
  • 2 carrots, sliced
  • 2 zucchini, sliced
  • 1 onion, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a large bowl, mix ground beef, cooked rice, egg, garlic, cumin, and salt. Form into meatballs.
  2. In a large pot, bring chicken broth to a boil. Add meatballs and reduce to a simmer.
  3. Add diced tomatoes, carrots, zucchini, onion, oregano, salt, and pepper. Simmer for 30 minutes.
  4. Serve hot and enjoy!
