Ingredients 

Meatballs

  • 1 lb ground beef
  • ½ cup uncooked white rice
  • 1 egg beaten
  • 2 cloves garlic minced
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Soup

  • 1 onion chopped
  • 2 cloves garlic minced
  • 8 cups beef broth
  • 3 carrots sliced
  • 2 zucchini sliced
  • 1 cup frozen peas
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. In a large mixing bowl, combine ground beef, rice, beaten egg, minced garlic, chopped cilantro, salt, and black pepper. Mix well and form into small meatballs.
  2. In a large pot, sauté chopped onion and minced garlic until fragrant.
  3. Add beef broth to the pot and bring to a boil.
  4. Gently add the meatballs to the boiling broth. Reduce heat and simmer for 20 minutes.
  5. Add sliced carrots and zucchini to the pot. Continue to simmer for another 15 minutes.
  6. Stir in frozen peas and chopped cilantro. Season with salt and black pepper to taste. Simmer for an additional 5 minutes.
  7. Serve hot and enjoy!
